Apple Fritter Coffee Cake


Nothing says fall like quite like cake and apples!

APPLE FRITTER COFFEE CAKE


INGREDIENTS:
Apple Mixture
  • 2 - 3 apples, peeled and chopped
  • 1 tsp. lemon juice
  • 2 Tbsp. sugar
  • 1 tsp. cinnamon
Cake
  • 1/3 cup brown sugar
  • 1 tsp. cinnamon
  • 2/3 cup sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 1 1/2 tsp. vanilla
  • 1 1/2 cups flour
  • 1 3/4 tsp. baking powder
Glaze
  • 1/2 cup milk
  • 1/2 cup powdered sugar
  • 1 Tbsp. milk

DIRECTIONS:
  1. Preheat oven to 350. Line (with aluminum foil) and grease a 9-by-9-inch pan.
  2. In a medium bowl, mix together the chopped apples, lemon juice, 2 tablespoons of the sugar, and cinnamon. Set aside.
  3. In a bowl, mix together the brown sugar and cinnamon. Set aside.
  4. Beat 2/3 cup of the sugar, and butter until smooth. Add the eggs and vanilla.
  5. Slowly incorporate the flour and baking powder.
  6. Layer half of the batter in the prepared pan. Spread half of the apple mixture on top. Add half of the cinnamon/sugar on top.
  7. Repeat step 6.
  8. Bake until cooked through, about 55 to 60 minutes.
  9. Pull out of the oven and let cool for about 15 minutes.
  10. Meanwhile, stir the milk, powdered sugar, and milk in a small bowl.
  11. When the cake has cooled some, drizzle the prepared glaze over the top.
  12. Enjoy!
