Nothing says fall like quite like cake and apples!

APPLE FRITTER COFFEE CAKE
INGREDIENTS:
Apple Mixture
- 2 - 3 apples, peeled and chopped
- 1 tsp. lemon juice
- 2 Tbsp. sugar
- 1 tsp. cinnamon
Cake
- 1/3 cup brown sugar
- 1 tsp. cinnamon
- 2/3 cup sugar
- 1/2 cup butter, softened
- 2 eggs
- 1 1/2 tsp. vanilla
- 1 1/2 cups flour
- 1 3/4 tsp. baking powder
Glaze
- 1/2 cup milk
- 1/2 cup powdered sugar
- 1 Tbsp. milk
DIRECTIONS:
- Preheat oven to 350. Line (with aluminum foil) and grease a 9-by-9-inch pan.
- In a medium bowl, mix together the chopped apples, lemon juice, 2 tablespoons of the sugar, and cinnamon. Set aside.
- In a bowl, mix together the brown sugar and cinnamon. Set aside.
- Beat 2/3 cup of the sugar, and butter until smooth. Add the eggs and vanilla.
- Slowly incorporate the flour and baking powder.
- Layer half of the batter in the prepared pan. Spread half of the apple mixture on top. Add half of the cinnamon/sugar on top.
- Repeat step 6.
- Bake until cooked through, about 55 to 60 minutes.
- Pull out of the oven and let cool for about 15 minutes.
- Meanwhile, stir the milk, powdered sugar, and milk in a small bowl.
- When the cake has cooled some, drizzle the prepared glaze over the top.
- Enjoy!
