Banana Nut Muffins


You know banana bars?

This is like that...

But with MUFFINS!

BANANA NUT MUFFINS


INGREDIENTS:
Muffins:
  • 3 cups flour
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1 cup melted butter
  • 1 1/3 cup sugar
  • 2 eggs
  • 2 tsp. vanilla
  • 6 ripe bananas
Topping, optional:
  • 1/4 cup flour
  • 1/4 cup butter
  • 1/4 cup oats
  • 2/3 cups candied pecans (or regular pecans and some brown sugar), chopped

DIRECTIONS:
  1. Preheat oven to 375.
  2. Grease or line 24 muffin cups.
  3. Mix the flour, baking powder, baking soda and salt together in a bowl. Set aside.
  4. Stir the melted butter, sugar, eggs and vanilla together. Add the dry ingredients to the wet ingredients and stir.
  5. Fill each muffin cup 3/4 of the way full.
  6. Mix the topping ingredients together. Sprinkle the topping on the batter/muffins.
  7. Bake for minutes, or until a toothpick comes out clean.
