Crumble-top Banana Bread

CRUMBLE-TOP BANANA BREAD


INGREDIENTS:
  • 3 - 4 bananas, mashed
  • 1 cup plus 2 Tbsp. brown sugar
  • 1 tsp. vanilla
  • 1 tsp. cinnamon
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 2 cups flour
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 2 Tbsp. sour cream
  • 1 tsp. cinnamon
  • 1 cup flour
  • 6 Tbsp. cold butter

DIRECTIONS:
  1. Preheat oven to 350 and grease two loaf pans.
  2. Put the bananas, 2 tablespoons of brown sugar, vanilla, cinnamon and sour cream in a large bowl. Stir together well.
  3. Cream together the 1/2 cup of softened butter and sugar. Add the eggs. Stir in the banana mixture.
  4. Slowly incorporate the flour, baking soda and salt.
  5. Split the batter between the two loaf pans.
  6. To make the topping, stir together the cinnamon, flour, 1 cup of brown sugar. Mix in the cold butter, leaving pea-sized pieces visible.
  7. Sprinkle the topping on top of the batter.
  8. Bake each loaf until cooked through, about 55 to 60 minutes.
