INGREDIENTS:
- 3 - 4 bananas, mashed
- 1 cup plus 2 Tbsp. brown sugar
- 1 tsp. vanilla
- 1 tsp. cinnamon
- 1/2 cup butter, softened
- 1 cup sugar
- 2 eggs
- 2 cups flour
- 1 tsp. baking soda
- 1/4 tsp. salt
- 2 Tbsp. sour cream
- 1 tsp. cinnamon
- 1 cup flour
- 6 Tbsp. cold butter
DIRECTIONS:
- Preheat oven to 350 and grease two loaf pans.
- Put the bananas, 2 tablespoons of brown sugar, vanilla, cinnamon and sour cream in a large bowl. Stir together well.
- Cream together the 1/2 cup of softened butter and sugar. Add the eggs. Stir in the banana mixture.
- Slowly incorporate the flour, baking soda and salt.
- Split the batter between the two loaf pans.
- To make the topping, stir together the cinnamon, flour, 1 cup of brown sugar. Mix in the cold butter, leaving pea-sized pieces visible.
- Sprinkle the topping on top of the batter.
- Bake each loaf until cooked through, about 55 to 60 minutes.
