Strawberry Muffins


No, that's not an over-sized strawberry you see. It's a normal strawberry next to adorable mini-muffins!

Their tiny, almost-bite-sized portions make them super easy to eat. (I ate two of them while I was taking pictures. Mmm...) They're also great for kids who don't normally finish a big muffin.

I love these muffins. They're tasty, delicious, and yummy all at once!

STRAWBERRY MUFFINS


INGREDIENTS:
  • 1 stick (1/2 cup) butter, softened
  • 1/2 cup sugar
  • 1 egg
  • 3 - 5 drops red/pink food coloring, optional
  • 1/4 tsp. vanilla
  • 1 cup flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • Pinch of salt
  • 1/2 cup buttermilk
  • 1/2 cup finely chopped berries with 1 Tbsp. flour
DIRECTIONS:
  1. Preheat oven to 375.
  2. Cream the butter and the sugar. Add the egg, food coloring, and vanilla.
  3. Slowly incorporate the flour, baking powder, soda, and salt.
  4. Stir in the buttermilk and berries/flour.
  5. Line a mini muffin pan with cupcake liners.
  6. Fill each muffin cup up 3/4 of the way.
  7. Bake for about 10 minutes, or until a toothpick comes out clean.
Makes 44 mini-muffins.

Note: if you'd rather have big muffins, line a normal muffin pan with liners, fill each cup 3/4 of the way, and bake for about 14 - 16 minutes (or until a toothpick comes out clean). Enjoy!
