No, that's not an over-sized strawberry you see. It's a normal strawberry next to adorable mini-muffins!
Their tiny, almost-bite-sized portions make them super easy to eat. (I ate two of them while I was taking pictures. Mmm...) They're also great for kids who don't normally finish a big muffin.
I love these muffins. They're tasty, delicious, and yummy all at once!

STRAWBERRY MUFFINS
INGREDIENTS:
- 1 stick (1/2 cup) butter, softened
- 1/2 cup sugar
- 1 egg
- 3 - 5 drops red/pink food coloring, optional
- 1/4 tsp. vanilla
- 1 cup flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- Pinch of salt
- 1/2 cup buttermilk
- 1/2 cup finely chopped berries with 1 Tbsp. flour
DIRECTIONS:
Note: if you'd rather have big muffins, line a normal muffin pan with liners, fill each cup 3/4 of the way, and bake for about 14 - 16 minutes (or until a toothpick comes out clean). Enjoy!
- Preheat oven to 375.
- Cream the butter and the sugar. Add the egg, food coloring, and vanilla.
- Slowly incorporate the flour, baking powder, soda, and salt.
- Stir in the buttermilk and berries/flour.
- Line a mini muffin pan with cupcake liners.
- Fill each muffin cup up 3/4 of the way.
- Bake for about 10 minutes, or until a toothpick comes out clean.
