INGREDIENTS:
- 1 (16 ounce) box spaghetti noodles
- 1 (28 ounce) can tomatoes, with liquid
- 2 fresh tomatoes
- 1 onion, thinly sliced
- 4 garlic cloves
- 4 cups chicken broth
- 2 Tbsp. olive oil
- 10 - 12 basil leaves
- Parmesan, optional
DIRECTIONS:
P.S.: This is really good cold, too! :)
- Add the noodles, tomatoes, onion, garlic, broth, oil and half of the basil leaves.
- Cover and bring to a boil, stirring often.
- After the noodles are cooked, add the rest of the basil leaves. If desired, add fresh tomatoes and garnish with Parmesan.
- Enjoy!
P.S.: This is really good cold, too! :)
