Chocolate Sheet Cake

CHOCOLATE SHEET CAKE

INGREDIENTS;
Cake:
  • 2 cups flour
  • 2 cups sugar
  • 1/4 tsp. salt
  • 1/4 cup cocoa
  • 1 cup (two sticks) butter
  • 1 cup boiling water
  • 2 eggs
  • 1/2 cup buttermilk
  • 1 tsp. baking soda
  • 1 tsp. vanilla
Frosting:
  • 1 and 3/4 stick butter
  • 1/4 cocoa
  • 6 Tbsp. milk
  • 1 tsp. vanilla
  • 3 cups powdered sugar
Optional:
  • 1/4 cup pecans, finely chopped
DIRECTIONS:
  1. Put the flour, sugar and salt in a large bowl.
  2. Melt the butter on the stove or in the microwave. 
  3. Stir in the cocoa.
  4. Add the boiling water and allow the mixture to boil for about 30 seconds. Turn off the heat. Pour the mixture into the bowl with the flour and stir slightly.
  5. Preheat oven to 350.
  6. In a measuring cup or small bowl, beat the eggs. Add the buttermilk, baking soda and vanilla. Pour the mixture into the chocolate mixture and stir.
  7. Spread the batter evenly in a 18-by-13-inch pan.
  8. Bake for about 20 minutes, or until a toothpick comes out clean.
  9. Meanwhile, make the frosting. Melt the butter on the stove or in the microwave. Stir in the cocoa, milk, vanilla and powdered sugar. 
  10. After the cake is out of the oven, smooth the frosting over the top and sprinkle the top with pecans.
