CHOCOLATE SHEET CAKE
INGREDIENTS;
Cake:
- 2 cups flour
- 2 cups sugar
- 1/4 tsp. salt
- 1/4 cup cocoa
- 1 cup (two sticks) butter
- 1 cup boiling water
- 2 eggs
- 1/2 cup buttermilk
- 1 tsp. baking soda
- 1 tsp. vanilla
Frosting:
- 1 and 3/4 stick butter
- 1/4 cocoa
- 6 Tbsp. milk
- 1 tsp. vanilla
- 3 cups powdered sugar
Optional:
- 1/4 cup pecans, finely chopped
DIRECTIONS:
- Put the flour, sugar and salt in a large bowl.
- Melt the butter on the stove or in the microwave.
- Stir in the cocoa.
- Add the boiling water and allow the mixture to boil for about 30 seconds. Turn off the heat. Pour the mixture into the bowl with the flour and stir slightly.
- Preheat oven to 350.
- In a measuring cup or small bowl, beat the eggs. Add the buttermilk, baking soda and vanilla. Pour the mixture into the chocolate mixture and stir.
- Spread the batter evenly in a 18-by-13-inch pan.
- Bake for about 20 minutes, or until a toothpick comes out clean.
- Meanwhile, make the frosting. Melt the butter on the stove or in the microwave. Stir in the cocoa, milk, vanilla and powdered sugar.
- After the cake is out of the oven, smooth the frosting over the top and sprinkle the top with pecans.
