Pumpkin Latte Cookies


Welcome to the thirty-sixth post in my year-long Cookie Series, where I want to bring you a new and delicious cookie recipe every Tuesday of 2015!

My mom came up with the recipe for these cookies. 

After she tried them, she said, "I like them a latte." 

Ha ha! She made a funny.

PUMPKIN LATTE COOKIES


INGREDIENTS:
  • 1/2 cup (1 stick) butter, softened
  • 3/4 cup brown sugar
  • 3/4 cup white sugar
  • 1 cup pumpkin
  • 2 eggs
  • 1 1/2 tsp. vanilla
  • 2 3/4 cups flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/4 tsp. nutmeg
  • 1/4 tsp. cloves
  • 1 tsp. espresso powder, optional
  • 3/4 cup walnuts, optional

DIRECTIONS:
  1. Preheat the oven to 350.
  2. Cream the butter and the sugars. 
  3. Add the pumpkin, eggs and vanilla.
  4. Slowly mix in the flour, soda, powder, cinnamon, salt, nutmeg, cloves and espresso powder.
  5. Once a nice batter is formed, mix in the walnuts.
  6. Scoop onto parchment-lined baking sheets. 
  7. Bake for 9 to 11 minutes.
  8. Once the cookies are cooled, you can top them with Cream Cheese Frosting, whipped cream, chopped nuts, cinnamon or espresso powder.
