Double Chocolate Zucchini Cookies


Welcome to the thirty-eighth post in my year-long Cookie Series, where I want to bring you a new and delicious cookie recipe every Tuesday of 2015!

Right now, I'm eating a soft, delicious and super chocolate-y cookie. 

Seriously, these might be one of the best chocolate cookies I've ever had. I can't even taste the zucchini.

I think the zucchini is just there to make people feel healthier, like putting a treadmill in your basement before you sit on the couch and eat a bag of chips.

DOUBLE CHOCOLATE ZUCCHINI COOKIES


INGREDIENTS:
  • 1/2 cup (1 stick) butter, softened
  • 1/2 cup white sugar
  • 1/2 cup brown sugars.
  • 1 egg
  • 1 tsp. vanilla
  • 2 cups grated zucchini
  • 2 1/2 cup flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 package mini chocolate chips

DIRECTIONS:
  1. Preheat oven to 350.
  2. Cream the butter and the sugars.
  3. Add the egg and vanilla.
  4. Stir in the zucchini.
  5. Slowly add the flour, soda, powder and salt.
  6. Add the chocolate chips.
  7. Bake for 10 to 12 minutes on parchment-lined cookie sheets.
