CARROT CAKE COOKIES
INGREDIENTS:
- 2 1/4 cup flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 cup (2 sticks) butter
- 1 cup brown sugar
- 1 cup white sugar
- 1 tsp. vanilla
- 2 eggs
- 1 cup coconut
- 1 cup raisins
- 3/4 cup oats
- 3/4 cups chopped nuts
- 2 cup carrots, grated
DIRECTIONS:
- Mix the flour, baking soda, baking powder, salt, cinnamon and nutmeg together in a bowl and set aside.
- Cream the butter and the sugars.
- Add the vanilla and eggs.
- Mix in the coconut, raisins, oats, nuts and carrots.
- Cover and refrigerate.
- Preheat oven to 375.
- Using a small scoop, place balls of dough on parchment-lined baking sheets.
- Bake for 7-8 minutes.
- Once cooled, cover with Cream Cheese Frosting, if desired.
