Carrot Cake Cookies


Welcome to the thirty-fifth post in my year-long Cookie Series, where I want to bring you a new and delicious cookie recipe every Tuesday of 2015!

CARROT CAKE COOKIES


INGREDIENTS:

  • 2 1/4 cup flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1 cup (2 sticks) butter
  • 1 cup brown sugar
  • 1 cup white sugar
  • 1 tsp. vanilla
  • 2 eggs
  • 1 cup coconut
  • 1 cup raisins
  • 3/4 cup oats
  • 3/4 cups chopped nuts
  • 2 cup carrots, grated

DIRECTIONS:

  1. Mix the flour, baking soda, baking powder, salt, cinnamon and nutmeg together in a bowl and set aside.
  2. Cream the butter and the sugars.
  3. Add the vanilla and eggs.
  4. Mix in the coconut, raisins, oats, nuts and carrots.
  5. Cover and refrigerate.
  6. Preheat oven to 375. 
  7. Using a small scoop, place balls of dough on parchment-lined baking sheets. 
  8. Bake for 7-8 minutes. 
  9. Once cooled, cover with Cream Cheese Frosting, if desired.
