No-bake Peanut Butter Crunch Cookies

NO-BAKE PEANUT BUTTER CRUNCH COOKIES


INGREDIENTS:
  • 1 cup peanut butter
  • 6 Tbsp. honey
  • 2 tsp. vanilla extract
  • 3 cups rice cereal
  • 2 Tbsp. flour
  • 1/2 cup chocolate chips
  • 1 Tbsp. peanut butter
  • Sprinkles

DIRECTIONS:
  1. Stir together the peanut butter, honey and vanilla in a microwave safe bowl. Microwave for 20 seconds, or until the peanut butter is melted and the entire mixture is runny.
  2. Add in cereal and flour and stir until the cereal is completely coated.
  3. Cover with plastic wrap and refrigerate.
  4. After the dough was in the fridge for at least 30 minutes scoop the cookies onto parchment paper.
  5. Refrigerate the cookies for at least 15 minutes.
  6. Melt the chocolate. Add the peanut butter and stir until smooth. 
  7. Dip each cookie halfway in the chocolate. Top with sprinkles if desired.
  8. Allow the chocolate to harden.

Note: If your house in warm, keep the cookies in the refrigerator.
