- 2/3 cups sugar
- 1 2/3 cup flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 1/2 cup vegetable oil
- 2 eggs
- 2 or 3 bananas, mashed
- 1 tsp. vanilla
Topping:
- 1/2 cup sugar
- 1/2 tsp. cinnamon
DIRECTIONS:
- Preheat oven to 375 and line muffin pans with 24 muffin liners.
- Sift the sugar, flour, baking soda, salt, and cinnamon into a bowl.
- Add the eggs, mashed bananas, vegetable oil, and vanilla. Stir the ingredients together.
- Split the batter among the muffin liners, filling each about 3/4 (?) of the way full.
- Bake for 17 to 19 minutes, or until cooked through.
