- 1 1/2 cups flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. cinnamon
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- 1/8 tsp. nutmeg
- 2 eggs
- 3/4 to 1/2 cup sugar
- 1/2 cup mashed banana
- 1/2 cup apple butter
- 1/4 cup canola (or vegetable) oil
DIRECTIONS:
- Preheat oven to 350. Grease or line 18 muffin cups.
- Mix together the flour, baking powder, cinnamon, baking soda, salt and nutmeg in a bowl. Set aside.
- Cream the eggs and sugar. Add the banana, apple butter, and oil.
- Slowly incorporate the dry ingredients.
- Fill each muffin cup 3/4 of the way full with batter.
- Bake for 15 minutes, or until a toothpick comes out clean.
