I know I've shared a lot of desserts recently, but this one's a bit different.
Although these energy bites are sweet and can have chocolate or M&Ms (if you want), they're relatively healthy. The original recipe, for instance, calls for honey as the sweetener and oats as the main ingredient.
Also, the recipe can be adapted to a variety of tastes to make it even healthier.
If you don't like chocolate, add raisins instead. If you don't want any Nutella (we didn't use any in ours), why not replace it with peanut butter? If you don't want vanilla, leave it out. Really, it's that easy!

So, without further ado, here's the recipe:

OATMEAL ENERGY BITES
INGREDIENTS:
- 3 cups oats
- 1 cup peanut butter and/or Nutella
- 2/3 cup honey
- 1 Tbsp. Chia seeds
- 2 tsp. vanilla
OPTIONAL ADDITIONS:
- Pistachio Cherry: 1/4 Pistachio and 1/4 cup cherries
- Chocolate Chip: 1/4 cup chocolate chips
- M&M's: 1/8 cup chocolate chips
- Coconut: 1/4 cup coconut flakes
DIRECTIONS:
- Stir all of the main ingredients together.
- Add in any extra ingredients. If you want to try several varieties, split the dough accordingly. (Our energy bites were split into thirds, so we could try three different kinds.)
- Chill the "dough" in the refrigerator.
- After the it's cooled, scoop the "dough" into balls using a teaspoon cookie scoop.
- Roll each scoop into a ball.
- Enjoy!
