Polish Butter Cookies


Welcome to the fiftieth post in my year-long Cookie Series, where I want to bring you a new and delicious cookie recipe every Tuesday of 2015!

I'm eating a Polish Butter Cookie right now, and it tastes amazing.

It tastes light and crunchy, but not too light and crunchy. Mmm.

I've interrupted myself about four times to take another bite. 

Make that five.

It tastes like something everybody in my family should taste.

Make that six.

I started this introduction with a whole cookie.

Make that seven. 

Now there is no cookie. 

Mmmmm.

P.S.: They don't look great in the pictures, but they looked better in real life.

POLISH BUTTER COOKIES

INGREDIENTS;
  • 2 cups flour
  • 1/2 tsp. salt
  • 1 cup (2 sticks) butter, softened
  • 3/4 cup sugar
  • 5 hard-boiled egg yolks pushed through a sieve
  • 1 tsp. vanilla
  • 1/4 cup sugar
  • 1/2 tsp. cinnamon, optional
  • 1 large egg
  • 1 tsp. milk

DIRECTIONS:
  1. Sift the flour and salt.
  2. Cream the butter and sugar.
  3. Add the egg yolks and vanilla.
  4. Cover and chill until the dough is firm and stiff.
  5. Preheat oven to 350.
  6. Roll and cut into cookie shapes. 
  7. Set on a greased or parchment-lined cookie sheet.
  8. Stir together the sugar, cinnamon, egg and milk.
  9. Brush the egg/milk mixture over the top of the cookies
  10. Bake for 12 minutes.
  11. Enjoy!

  1. These sound like the cookies my mom used to make. She would cut one with a doughnut cutter and one with out the hole in the middle. Then bush the one with the hole with egg wash and sprinkle ground walnuts on top. Bake then after they cooled she would store them separately but when we went to eat them she would put strawberry jam on the flat one and put the one with the hole on top. Oh they were so rich and good!! I think she doubled this recipe. We only got them at Christmas! Yummy
