Banana Nut Muffins


Why has this introduction been so hard to write? It really shouldn't been this difficult. 

I should just go ahead and do it. 

What's the worse that could happen? I have to erase a terrible pun about bananas and/or nuts? 

OK, I'll try. I'll try to write a decent introduction.

You can't see it right now, but I really did try to write an introduction that had to do with these muffins.

Oh, well. Banana nut muffins are basically like they sound. They're banana nut muffins. They're muffins with bananas and nuts.

Hey, look at that! I wrote a banana nut muffin introduction! I'm glad that I don't have writer's block now. 

If you've ever had "Banana Nut Muffin Introduction Writer's Block" (BNMIWB), a rare condition where a person has trouble writing the introduction to a banana nut muffin introduction, please tell me in the comment section below.

BANANA NUT MUFFINS


INGREDIENTS:
  • 2 1/4 cup flour
  • 1 Tbsp. baking soda
  • 1/2 tsp. salt
  • 4 very ripe bananas 
  • 1 1/2 cups sugar
  • 3/4 cup butter, softened
  • 2 eggs
  • vanilla
  • 1/2 cup pecans, chopped

DIRECTIONS:
  1. Preheat oven to 375.
  2. Sift the flour, baking powder and salt together.
  3. Cream the bananas, sugar and butter. 
  4. Add the eggs and vanilla. 
  5. Slowly mix in the dry ingredients.
  6. Stir in the pecans.
  7. Grease or line cupcake pans.
  8. Fill each muffin cup about 1/2 - 2/3 of the way.*
  9. Bake for 12 minutes.

* 1/2 way = approx. 24 regular muffins and 24 mini muffins.
