What else can I say? These cookies taste good, look good and they're good for you, too, if chocolate is healthy.

CHOCOLATE BROWNIE COOKIES
INGREDIENTS:
- 2 large eggs
- 2/3 cup sugar
- 1 tsp. vanilla extract
- 2 Tbsp. unsalted butter
- 7 ounces chocolate, chopped (any kind you like)
- 1/2 Tbsp. espresso powder
- 1/4 cup flour
- 1/4 tsp. baking powder
- 1/8 tsp. salt
- 3/4 cup mini chocolate chips
DIRECTIONS:
Note: If the batter is too wet, let it sit for a moment before using it. After about five minutes, the batter should be better.

- Preheat oven to 375.
- Whip the eggs. Add in the sugar and vanilla and beat (on a high speed) for 15 minutes, or until thick.
- Meanwhile, place the butter, chocolate and espresso powder in a double boiler and heat until melted. Take off of the heat and stir until the chocolate mixture is smooth.
- Fold the chocolate into the eggs (streaks are a-ok!)
- Add the flour, baking powder and salt carefully.
- Lastly, fold in the chocolate chips.
- Bake for 8 to 9 minutes, or until puffed and cracked.
Note: If the batter is too wet, let it sit for a moment before using it. After about five minutes, the batter should be better.
