Chocolate Brownie Cookies



Welcome to the sixteenth post in my year-long Cookie Series, where I want to bring you a new and delicious cookie recipe every Tuesday of 2015.

Imagine brownies.

Now, imagine cookies.

Lastly, imagine chocolate brownie cookies!

What else can I say? These cookies taste good, look good and they're good for you, too, if chocolate is healthy.

Chocolate is healthy, right?!?

CHOCOLATE BROWNIE COOKIES


INGREDIENTS:
  • 2 large eggs
  • 2/3 cup sugar
  • 1 tsp. vanilla extract
  • 2 Tbsp. unsalted butter
  • 7 ounces chocolate, chopped (any kind you like)
  • 1/2 Tbsp. espresso powder
  • 1/4 cup flour
  • 1/4 tsp. baking powder
  • 1/8 tsp. salt
  • 3/4 cup mini chocolate chips

DIRECTIONS:
  1. Preheat oven to 375.
  2. Whip the eggs. Add in the sugar and vanilla and beat (on a high speed) for 15 minutes, or until thick.
  3. Meanwhile, place the butter, chocolate and espresso powder in a double boiler and heat until melted. Take off of the heat and stir until the chocolate mixture is smooth.
  4. Fold the chocolate into the eggs (streaks are a-ok!)
  5. Add the flour, baking powder and salt carefully. 
  6. Lastly, fold in the chocolate chips.
  7. Bake for 8 to 9 minutes, or until puffed and cracked. 

Note: If the batter is too wet, let it sit for a moment before using it. After about five minutes, the batter should be better.
