POPCORN COOKIES
INGREDIENTS:
- 4 cups microwave popcorn
- 1/2 cup unsalted butter, softened
- 1/2 cup light brown sugar
- 1/3 cup granulated sugar
- 1 egg
- 1 tsp. vanilla
- 1 1/4 flour
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/2 cup dark chocolate chips
DIRECTIONS:
- Preheat oven to 350.
- Cream the butter and sugars until fluffy (about 3 minutes). Beat in egg and vanilla for about a minute.
- Add the flour, baking soda and salt and beat (on low) until just combined.
- Fold in the chocolate and then the popcorn. The popcorn will break a bit as you do so.
- Bake for 10-13 minutes.
