Popcorn Cookies


Welcome to the first post in my year-long Cookie Series, where I want to bring you a new and delicious cookie recipe every Tuesday of 2015!

Actor 1: You got popcorn on my cookie!

Announcer: Introducing the popcorn cookie, a wonderful blend of crunchy, chewy and chocolaty goodness.

POPCORN COOKIES


INGREDIENTS:
  • 4 cups microwave popcorn
  • 1/2 cup unsalted butter, softened
  • 1/2 cup light brown sugar
  • 1/3 cup granulated sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 1/4 flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 cup dark chocolate chips

DIRECTIONS:
  1. Preheat oven to 350.
  2. Cream the butter and sugars until fluffy (about 3 minutes). Beat in egg and vanilla for about a minute. 
  3. Add the flour, baking soda and salt and beat (on low) until just combined. 
  4. Fold in the chocolate and then the popcorn. The popcorn will break a bit as you do so.
  5. Bake for 10-13 minutes.
